Build in human review gates for high-stakes decisions. LLM output for low-stakes classification (content tagging) can go directly to production. LLM output for high-stakes decisions (lead routing, customer communication) should have a human review stage until reliability is established.
Treat LLM infrastructure like any other production system. Monitoring, error handling, fallback behavior, and latency budgets apply. An LLM that takes 8 seconds to respond isn't suitable for a synchronous user-facing workflow, but may be perfect for a nightly batch process.
